Ingredients
For the Burgers:
1.4 lb Skinless, boneless chicken breast, x4 breasts
3 oz Greek yoghurt
3.5 oz Tortilla chips
1 tsp Dried oregano
2 tsp Paprika
2 tsp Garlic granules
▢Sea salt and freshly ground black pepper
For the Hot Honey Mayo:
3.5 oz Mayonnaise
2 tsp honey
2 tsp Chili sauce
Juice of a lime
To Serve:
4 Burger buns
4 Cheddar cheese slices
Lettuce
Red onion
Instructions
Preheat the oven to 400°F.
Mix yogurt, oregano, paprika, garlic powder, salt, and pepper. Coat the chicken with the mixture.
Crush tortilla chips into fine crumbs. Roll the yogurt-coated chicken in the crushed chips.
Place chicken on an oven-safe grill rack over a baking sheet, drizzle with oil for extra crispiness. Bake for 20 minutes, turning halfway.
While baking, mix the hot honey mayo ingredients in a bowl and set aside.
After 20 minutes, remove chicken from the oven. Move chicken to one side of the rack and place buns cut-side up on the other. Put cheese on half the buns. Return to the oven for 5 minutes. Chicken should be cooked and golden (check with a meat thermometer if available).
Assemble burgers with chicken, buns, lettuce, onions, and mayo.
