Ingredients

  • 1 broiler/fryer Chicken

  • 10 cups water

  • 1 large carrot, sliced

  • 1 large onion. sliced

  • 1 celery rib, sliced

  • 1 garlic clove, minced

  • 1 bay leaf

  • 1 teaspoon dried thyme

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

Directions

  1. In a large pot combine all ingredients

  2. Bring to a slow boil on low

  3. Cover and let simmer for 45-60 minutes

  4. Remove chicken and let cool

  5. Remove and discard skin and bones

  6. Chop chicken and save for later use

  7. Strain broth through cheesecloth-lined colander

  8. Discard veggies

  9. Refrigerate for 8 hours then skim fat
