Ingredients
1 broiler/fryer Chicken
10 cups water
1 large carrot, sliced
1 large onion. sliced
1 celery rib, sliced
1 garlic clove, minced
1 bay leaf
1 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon pepper
Directions
In a large pot combine all ingredients
Bring to a slow boil on low
Cover and let simmer for 45-60 minutes
Remove chicken and let cool
Remove and discard skin and bones
Chop chicken and save for later use
Strain broth through cheesecloth-lined colander
Discard veggies
Refrigerate for 8 hours then skim fat
