Ingredients:

  • 8 thick slices cooked ham

  • 8 English Muffins

  • 2 tablespoon butter (1 oz.)

  • 8 poached eggs

    Hollandaise Sauce

  • 3 egg yolks

  • 1 tablespoon cold water

  • 1/2 cup butter (4 oz)

  • 1/4 teaspoon salt

  • 1/8 teaspoon cayenne pepper

  • 1 teaspoon lemon juice

  • 1 tablespoon sour cream

Directions:

  1. Preheat oven to 275°

  2. Place ham on grill and grill for 2-3 minutes on each side

  3. place in over to keep warm

  4. toast muffins to desired crunch

To Prepare the sauce:

  1. beat 3 egg yolks and water together until mixed

  2. gradually beat butter until sauce begins to thicken

  3. add salt, cayenne pepper, and lemon juice

  4. beat in the cream

  5. set pan to side

Plate Dish and Serve

  1. spread butter on muffin

  2. place ham on muffin

  3. top ham with poached eggs

  4. pour a little sauce over the muffin
