Ingredients:

  • 2 tablespoons vegetable oil

  • 1 medium sized onion finely chopped

  • 14 oz canned peeled tomatoes

  • 2 tablespoons tomato puree

  • 1 teaspoon dried oregano

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 6 bacon slices

  • 2 tablespoons butter (1 oz)

  • 1 teaspoon finely chopped tarragon or thyme

  • 6 boneless chicken breasts

  • 4 oz sliced Mozzarella cheese

Directions:

Sauce

  1. in a medium saucepan heat the vegetable oil over medium heat

  2. When oil is hot add onions for 5-7 minutes until soft and translucent

  3. add tomatoes, tomato puree oregano, salt, and pepper

  4. stir til it comes to boil then turn heat down to simmer for 20 minutes

Main Dish

  1. In a large frying pan fry bacon on medium heat for 5 minutes or until crispy

  2. Remove bacon and let sit

  3. Add butter to pan

  4. once foam subsides stir in tarragon/thyme

  5. Add chicken and fry for 15 to 20 minutes or until tender; flip occasionally

  6. Preheat oven on broil

  7. place chicken breasts on a pan

  8. place bacon on chicken breast and pour tomato sauce over chicken

  9. top meal with cheese

  10. place pan into oven for 4-5 minutes or until cheese melts
