Ingredients:

To cook the chicken:

  • 1.4 lb. Chicken breasts, x4 breasts

  • 3 tbsp Greek yoghurt

  • 1 tbsp Mild curry powder

For the sauce:

  • 6 tbsp Mayonnaise

  • 2 tbsp Greek yoghurt

  • 2 tbsp Mango chutney

  • 2 tsp Mild curry powder, Add 1tsp more if you prefer a stronger taste

  • Sea salt and freshly ground black pepper

  • 2 oz Dried apricots, Chopped into pieces

To serve:

  • 2 tbsp Flaked toasted almonds

Instructions 

  1. Preheat the oven to 400°F (if using the oven cook method shown below.)

Prepare the Chicken Breasts:

  1. Put the chicken, Greek yoghurt and curry powder into a large bowl and stir until the chicken is well coated.

To Oven Cook the Chicken:

  1. Oil or line a baking try with foil or grease proof paper. Place the chicken on top.

  2. Roast the chicken for 18-20 minutes, carefully turning the chicken breasts over halfway through the cooking time. (The timings will depend slightly on how thick the chicken breasts are, always check with a thermometer to be sure).

  3. Set aside to cool.

To Air Fry the Chicken:

  1. Spray the bottom of the air fryer with some oil

  2. Carefully add the coated chicken breasts to the air fryer basket. Spray the tops with a little oil.

  3. Air Fry at 200°c/400°F for 10-15 minutes (the timings will depend on how thick the chicken breasts are, always check with a thermometer to be sure).

  4. Set aside to cool.

To make the coronation chicken:

  1. Shred, slice or chop the cooked chicken.

  2. Put the chicken into a large bowl with the rest of the sauce ingredients and mix until well combined.

  3. Sprinkle over the almonds to serve.
