Ingredients

  • 6 tbsp Plain flour

  • 1 tbsp Olive oil

  • 3 Garlic cloves, Peeled and crushed

  • 1 cups Sun dried tomatoes, Drained

  • 1 tsp Dried oregano

  • 2 tsp Paprika

  • 3/4 cup Heavy Whipping cream

  • 3/4 cup Chicken stock

  • 1/2 cup Parmesan cheese, Grated

  • 3 tbsp Fresh basil leaves

  • 1/2 Lemon, Just the juice

  • Sea salt and freshly ground black pepper

Instructions 

  1. Coat the chicken breasts with flour.

  2. Heat oil in a large pan over medium heat. Once hot, add the chicken and cook for 5 minutes on each side.

  3. Remove the chicken and turn the heat to low. Add garlic, sun-dried tomatoes, oregano, and paprika, cooking for 3-5 minutes until garlic softens.

  4. Stir in cream, stock, parmesan, salt, and pepper.

  5. Return the chicken to the pan, cover, and cook for 5 minutes. Turn the chicken and cook for another 5 minutes.

  6. Check that the chicken is fully cooked. Remove from heat, sprinkle with basil, and squeeze half a lemon over it.
