Ingredients
6 tbsp Plain flour
1 tbsp Olive oil
3 Garlic cloves, Peeled and crushed
1 cups Sun dried tomatoes, Drained
1 tsp Dried oregano
2 tsp Paprika
3/4 cup Heavy Whipping cream
3/4 cup Chicken stock
1/2 cup Parmesan cheese, Grated
3 tbsp Fresh basil leaves
1/2 Lemon, Just the juice
Sea salt and freshly ground black pepper
Instructions
Coat the chicken breasts with flour.
Heat oil in a large pan over medium heat. Once hot, add the chicken and cook for 5 minutes on each side.
Remove the chicken and turn the heat to low. Add garlic, sun-dried tomatoes, oregano, and paprika, cooking for 3-5 minutes until garlic softens.
Stir in cream, stock, parmesan, salt, and pepper.
Return the chicken to the pan, cover, and cook for 5 minutes. Turn the chicken and cook for another 5 minutes.
Check that the chicken is fully cooked. Remove from heat, sprinkle with basil, and squeeze half a lemon over it.
